A delightful loaf cake combining cherry pie filling and semi-sweet chocolate chips, evoking flavors of summer and nostalgia.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk
  • 1 cup cherry pie filling
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking powder, baking soda, and salt.
  3. Cream the softened butter and sugar until light and fluffy.
  4. Incorporate the eggs one at a time, then stir in the vanilla extract.
  5. Alternate adding the dry ingredients and buttermilk, starting and ending with the flour.
  6. Fold in the cherry pie filling and chocolate chips gently.
  7. Prepare a greased 9×5 inch loaf pan with the batter.
  8. Bake for 55-60 minutes, or until a toothpick inserted comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve at room temperature with vanilla ice cream or whipped cream. Store leftovers in an airtight container for up to 3 days, or freeze for 2 months.
