A hearty and comforting brunch dish featuring a flavorful medley of ham, bell peppers, and crispy hash browns topped with gooey cheese.

  • 4 cups frozen hash browns (thawed)
  • 1 tablespoon butter or olive oil
  • 1 cup diced cooked ham
  • 1/2 cup diced bell pepper (any color)
  • 1/2 cup diced onion
  • 8 large eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or blend)
  • Optional garnish: sliced green onions or parsley

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Melt butter or heat olive oil in a large oven-safe skillet or baking dish over medium heat.
  3. Add diced ham, bell pepper, and onion; sauté for 3–4 minutes until softened.
  4. Spread thawed hash browns evenly over the ham and veggie mixture.
  5. Whisk together eggs, milk, salt, pepper, and garlic powder until smooth.
  6. Pour the egg mixture evenly over the hash browns in the skillet.
  7. Sprinkle shredded cheese over the top.
  8. Bake uncovered for 25–30 minutes until eggs are set and cheese is melted and golden.
  9. Allow to cool slightly, then slice or scoop onto plates.
  10. Garnish with sliced green onions or parsley, if desired, before serving.

Notes

For a spicy touch, incorporate jalapeños or add hot sauce to the egg mixture. You can substitute ham with cooked sausage or bacon for variety.
