Cheesy Stuffed Italian Meatloaf

A comforting and savory meatloaf filled with mozzarella and spinach, perfect for family gatherings during chilly fall nights.

  • 2 lbs Ground Beef (80/20 blend)
  • 2 large Eggs
  • 1 cup Italian Breadcrumbs
  • 1/2 cup Grated Parmesan Cheese
  • 1/4 cup Milk
  • 3 cloves Garlic, minced
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 2 cups Fresh Spinach, chopped
  • 2 cups Shredded Mozzarella Cheese, divided
  • 2 cups Marinara Sauce
  • 2 tablespoons Fresh Parsley, chopped (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
  2. Combine ground beef, eggs, Italian breadcrumbs, grated Parmesan, milk, minced garlic, Italian seasoning, salt, and black pepper in a large bowl. Mix gently until just combined.
  3. Spread half of the meat mixture into the bottom of the prepared baking dish.
  4. Layer 1 cup of shredded mozzarella cheese over the meat base, followed by the chopped fresh spinach, and drizzle with 1/2 cup of marinara sauce.
  5. Cover the filling with the remaining meat mixture, pressing the edges to seal.
  6. Spoon an additional 1/2 cup of marinara sauce over the top.
  7. Bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C).
  8. Remove from the oven and sprinkle with remaining mozzarella cheese. Return to the oven for another 5-10 minutes to melt.
  9. Rest for 10 minutes before slicing.
  10. Serve warm with extra marinara sauce on the side.

Notes

Don’t overmix the meatloaf for a tender texture. You can substitute ground turkey or chicken for a lighter option.
