2 lbs Ground Beef (80/20 blend)
2 large Eggs
1 cup Italian Breadcrumbs
1/2 cup Grated Parmesan Cheese
1/4 cup Milk
3 cloves Garlic, minced
2 teaspoons Italian Seasoning
1 teaspoon Salt
1/2 teaspoon Black Pepper
2 cups Fresh Spinach, chopped
2 cups Shredded Mozzarella Cheese, divided
2 cups Marinara Sauce
2 tablespoons Fresh Parsley, chopped (optional)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish or line it with parchment paper.
Combine ground beef, eggs, Italian breadcrumbs, grated Parmesan, milk, minced garlic, Italian seasoning, salt, and black pepper in a large bowl. Mix gently until just combined.
Spread half of the meat mixture into the bottom of the prepared baking dish.
Layer 1 cup of shredded mozzarella cheese over the meat base, followed by the chopped fresh spinach, and drizzle with 1/2 cup of marinara sauce.
Cover the filling with the remaining meat mixture, pressing the edges to seal.
Spoon an additional 1/2 cup of marinara sauce over the top.
Bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C).
Remove from the oven and sprinkle with remaining mozzarella cheese. Return to the oven for another 5-10 minutes to melt.
Rest for 10 minutes before slicing.
Serve warm with extra marinara sauce on the side.
Notes
Don’t overmix the meatloaf for a tender texture. You can substitute ground turkey or chicken for a lighter option.
