A comforting and delicious dish that brings the family together with tender chicken breasts filled with creamy cheese and vibrant spinach.

  • 4 pieces Chicken Breasts (Boneless, skinless preferred)
  • 2 cups Spinach (Fresh is best, but ensure frozen spinach is thawed and drained)
  • 12 cloves Garlic (Minced)
  • 8 oz Cream Cheese (Neufchâtel can be used for lower fat)
  • 1 cup Mozzarella Cheese (Provolone or Monterey Jack can be alternatives)
  • 1/2 cup Parmesan Cheese (Opt for freshly grated)
  • 1 tbsp Olive Oil (Used for sautéing)
  • 1 tbsp Italian Herbs (Dried herbs work)
  • 1 tsp Salt
  • 1 tsp Black Pepper
  • 1 pkg Toothpicks/Kitchen Twine (For securing the roll-ups)

Instructions

  1. Prepare the Spinach Filling: Heat the olive oil in a skillet, add minced garlic and sauté until fragrant. Toss in fresh spinach and cook until wilted. Remove from heat and let cool slightly.
  2. Mix the Cheese Blend: In a bowl, combine cream cheese, mozzarella, Parmesan, Italian herbs, salt, and black pepper. Stir in the cooked spinach and garlic mixture.
  3. Prepare the Chicken Breasts: Pound each breast to an even thickness and season with salt and pepper.
  4. Stuff the Chicken: Spread the cheese mixture onto one side of each chicken breast.
  5. Roll and Secure: Roll tightly from the filled side and secure with toothpicks or twine.
  6. Sear the Roll-Ups: Add more olive oil to the skillet, place roll-ups seam side down, and sear until golden brown.
  7. Bake to Perfection: Transfer to a baking dish and bake at 375°F (190°C) for 20-25 minutes.
  8. Serve and Enjoy: Remove toothpicks, slice if desired, and serve warm.

Notes

Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 2 months. For best results, prepare the filling in advance.
