A comforting dish that combines creamy potatoes and melted cheese, perfect as a side or main dish.

  • 4 cups shredded potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup cream of chicken soup
  • 1/4 cup chopped onion
  • 1/4 cup melted butter
  • Salt and pepper to taste
  • 1 cup crushed cornflakes (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the shredded potatoes, cheddar cheese, sour cream, cream of chicken soup, chopped onion, and melted butter in a large mixing bowl. Season with salt and pepper.
  3. Pour the mixture into a greased casserole dish.
  4. If desired, sprinkle crushed cornflakes on top for added crunch.
  5. Bake for 45-50 minutes or until the top is golden and bubbly.
  6. Allow to cool slightly before serving.

Notes

For a creamier texture, increase the amount of sour cream. You can also add cooked bacon or ham for extra flavor.
