1 cup shredded cheddar cheese
1/2 cup sour cream
1/2 cup cream of chicken soup
1/4 cup chopped onion
1/4 cup melted butter

1 cup crushed cornflakes (optional)
Instructions
Preheat the oven to 350°F (175°C).
Combine the shredded potatoes, cheddar cheese, sour cream, cream of chicken soup, chopped onion, and melted butter in a large mixing bowl. Season with salt and pepper.
Pour the mixture into a greased casserole dish.
If desired, sprinkle crushed cornflakes on top for added crunch.
