A comforting and flavorful chicken burrito casserole that combines juicy chicken, fluffy rice, and melty cheese in one pot.

Ingredients

  • 1 cup Dry Long-Grain White Rice
  • 1 cup Corn Kernels
  • 14 oz Shredded Chicken
  • 3.5 cups Chicken Broth
  • 150 g Monterey Jack Cheese
  • 1 Avocado
  • 1 cup Salsa
  • 1 cup Greek Yogurt

Instructions

  1. Gather your ingredients on the countertop.
  2. Cook the rice in a large pot with chicken broth until tender.
  3. Mix in the shredded chicken and corn kernels.
  4. Add the salsa and stir until incorporated.
  5. Layer half of the cheese over the mixture.
  6. Bake in the oven at 350°F (175°C) for 15-20 minutes.
  7. Cool for a few minutes after baking.
  8. Garnish with Greek yogurt and avocado slices before serving.

Notes
