  • 1/4 cup milk (whole or low-fat)
  • 2 large eggs
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon salt
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon chopped fresh herbs (like parsley or chives, optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly.
  2. In a large mixing bowl, whisk together the well-drained cottage cheese, milk, and eggs until smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking powder, garlic powder (if using), and salt.
  4. Gradually add the dry mixture into the wet ingredients. Stir until just combined.
  5. Gently fold in your shredded cheese and fresh herbs.
  6. Carefully pour your batter into the prepared loaf pan and smooth the top.
  7. Place the loaf in the preheated oven and bake for about 40-45 minutes, or until golden brown.
  8. Remove from the oven and let it cool in the pan for about 10 minutes.
