A warm, cheesy chicken quesadilla that brings comfort and joy to any gathering.

Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 large tortillas
  • 1 tablespoon olive oil
  • 1 teaspoon taco seasoning (optional)
  • Sour cream and salsa for serving

Instructions

  1. Heat olive oil in a skillet over medium heat until it shimmers.
  2. Place one tortilla in the hot skillet and sprinkle half of the cheese evenly on top.
  3. Add the shredded chicken on top of the cheese, and if you’re feeling adventurous, sprinkle the taco seasoning.
  4. Top with the remaining cheese, and lovingly place another tortilla on top.
  5. Cook for about 3-4 minutes until the bottom tortilla is golden brown; flip it over and cook the other side for another 3-4 minutes.
  6. Remove from the skillet, let it cool for a minute, then slice into wedges.

Notes

These quesadillas can be customized with your favorite ingredients like veggies or different types of cheese.
