  • 1 cup diced onions
  • 1 cup milk
  • 1 cup shredded white cheddar cheese

Instructions

  1. Cook the Pasta: Start by bringing a large pot of salted water to a rolling boil. Toss in the rotini pasta and cook according to the package instructions until al dente. Once done, drain it and set it aside while you whip up the cheesy goodness.
  2. Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and black pepper, then add them to the pan. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the skillet and let it rest before slicing it into bite-sized pieces.
  3. Prepare the Aromatics: In the same skillet, add the butter and diced onions. Sauté until the onions become soft and translucent, about 3-4 minutes. Add the minced garlic and stir for another minute until it’s fragrant.

  5. Add Milk and Cheese: Pour in the milk, adding the dried thyme and oregano. Continue to stir until the mixture is creamy. Then, add the shredded white cheddar cheese and incorporate it until completely melted and creamy.
  6. Combine Pasta and Chicken: Add the cooked pasta and sliced chicken back into the skillet. Mix everything well until the pasta is coated with the heavenly cheese sauce. Taste and adjust seasoning if necessary.
