A comforting and indulgent casserole made with roasted butternut squash and a creamy cheese blend, perfect for family gatherings.

  • 1 medium butternut squash, peeled and diced
  • 2 cups shredded cheese (cheddar or a mix)
  • 1 cup heavy cream or milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional, for topping)
  • 2 tablespoons olive oil or butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss the diced butternut squash with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Bake for about 25 minutes until the squash is tender.
  4. Mix the shredded cheese, heavy cream, and grated Parmesan in a bowl.
  5. Combine the cheese mixture with the baked squash and stir to mix.
  6. Add breadcrumbs on top if using.
  7. Return to the oven and bake for an additional 15-20 minutes until bubbly and golden on top.
  8. Let it cool slightly before serving.
