A creamy cheesecake infused with the delicate fragrance of Earl Grey tea, perfect for celebrations or quiet evenings at home.

Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 600g cream cheese, at room temperature
  • 150g granulated sugar
  • 3 large eggs
  • 200g sour cream
  • 2 tablespoons Earl Grey tea leaves
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 160°C (320°F).
  2. Crush the digestive biscuits until they resemble fine crumbs, then mix them with the melted butter.
  3. Press the biscuit mixture firmly into the bottom of a springform pan.
  4. Beat the cream cheese and sugar until smooth and creamy.
  5. Add the eggs one at a time, mixing well after each addition.
  6. Stir in the sour cream, Earl Grey tea leaves, and vanilla extract until smooth.
  7. Pour the creamy mixture over the prepared crust and spread it evenly.
  8. Bake for 50-60 minutes, until set but slightly jiggly in the center.
  9. Cool to room temperature, then refrigerate for at least 4 hours, preferably overnight.

Notes

Serve with honey, whipped cream, or fresh berries. Store leftovers in an airtight container in the fridge for up to one week, or freeze for up to three months.
