Delightful Cheese Enchiladas wrapped in soft corn tortillas, filled with melted cheese and covered in a rich enchilada sauce.

Ingredients

  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 can (10 oz) enchilada sauce
  • 1/2 cup diced onion (optional)
  • 1/4 cup chopped cilantro (optional)
  • Sour cream (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Warm the corn tortillas in a skillet over medium heat for a few seconds on each side.
  3. Spread a little enchilada sauce on the bottom of a baking dish.
  4. Take a warm tortilla, place cheese and optional onion along the center, and roll it up tightly.
  5. Pour the remaining enchilada sauce over the filled tortillas.
  6. Sprinkle remaining cheese on top and bake for 20 minutes until bubbly and golden.
  7. Garnish with fresh chopped cilantro and serve with sour cream.

Notes

Feel free to customize your filling with black beans or sautéed vegetables for extra flavor.
