Easy and flavorful cauliflower tacos, perfect for any night of the week.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Corn or flour tortillas
  • 1 cup cilantro, chopped
  • 1/2 cup sour cream or Greek yogurt
  • Juice of 1 lime
  • Avocado slices (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. Toss the cauliflower florets with olive oil, chili powder, cumin, salt, and pepper.
  3. Spread the cauliflower on a baking sheet and roast for 25-30 minutes, flipping halfway.
  4. Prepare the cilantro lime crema by blending cilantro, sour cream, lime juice, and salt.
  5. Warm the tortillas in a skillet or microwave.
  6. Assemble the tacos with roasted cauliflower, cilantro lime crema, and avocado.
  7. Garnish with fresh cilantro and serve immediately.

Notes

For extra crispiness, cut cauliflower evenly and ensure even spacing on the baking sheet.
