A flavorful and healthy twist on traditional fried rice made with cauliflower and packed with veggies.

Ingredients

  • 1 head cauliflower
  • 2 tablespoons vegetable oil
  • 2 eggs
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • Soy sauce to taste
  • Salt and pepper to taste

Instructions

  1. Grate the cauliflower using a box grater or food processor to create rice-sized pieces.
  2. Heat the oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant.
  4. Sauté the mixed vegetables until tender, about 2-3 minutes.
  5. Scramble the eggs on one side of the skillet until fully cooked.
  6. Combine the cauliflower rice with the cooked ingredients and stir together.
  7. Season with soy sauce, salt, and pepper to taste.
  8. Final touch: stir in chopped green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet before serving.
