A delightful homemade carrot cake filled with grated carrots, spices, and texture from toasted nuts and raisins.

Ingredients

  • 2 cups grated carrots
  • 1 cup sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Beat together the sugar, vegetable oil, and eggs in a large bowl until well combined.
  3. Whisk together the flour, baking powder, baking soda, cinnamon, and salt in another bowl.
  4. Add the dry ingredients to the wet ingredients gradually and mix until just combined.
  5. Fold in the grated carrots, walnuts or pecans, and raisins if desired.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.
  8. Cool the cakes in the pans for 10 minutes before removing them to cool completely on wire racks.

Notes

Serve with cream cheese frosting and enjoy alongside coffee or tea.
