A delightful twist on traditional caramel apple pie, these cheesecake bars combine spiced apples with creamy cheesecake and a crumbly streusel topping.

Ingredients

Scale
  • 2 cups of graham cracker crumbs
  • 1/2 cup of unsalted butter, melted
  • 1/4 cup of granulated sugar
  • 2 packages (8 oz each) of cream cheese, softened
  • 1/2 cup of granulated sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 2 large Granny Smith apples, peeled, cored, and diced
  • 1/4 cup of granulated sugar
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of nutmeg
  • 3/4 cup of quick-cooking oats
  • 1/2 cup of all-purpose flour
  • 1/2 cup of brown sugar, packed
  • 1/2 cup of cold unsalted butter, diced
  • 1/2 cup of caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
  2. Combine the graham cracker crumbs, melted butter, and 1/4 cup of granulated sugar in a medium bowl. Press the mixture evenly into the prepared pan and bake for 8 minutes.
  3. Beat the cream cheese with 1/2 cup of granulated sugar in a large bowl until smooth and creamy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract. Pour this mixture over the cooled crust.
  4. Toss the diced Granny Smith apples with 1/4 cup of granulated sugar, cinnamon, and nutmeg until coated and spread the mixture evenly over the cheesecake layer.
  5. Mix the oats, flour, brown sugar, and cold diced butter in a bowl for the streusel. Combine until it resembles coarse crumbs and sprinkle it evenly over the apple layer.
  6. Bake for 30-35 minutes or until the cheesecake has set and the topping is golden brown.
  7. Cool completely at room temperature, then refrigerate for at least 2 hours before slicing into bars.
  8. Drizzle the bars with caramel sauce before serving.

Notes

Ensure cream cheese is softened for a smooth filling. You can use different types of apples based on preference.
