Juicy chicken breasts stuffed with mozzarella, fresh tomatoes, and basil, drizzled with balsamic glaze—a delightful Italian-inspired dish.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 ounces fresh mozzarella cheese
  • 2 medium Roma tomatoes
  • 1 cup fresh basil leaves
  • 1/3 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 teaspoons Dijon mustard
  • 2 cloves garlic (minced)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper in a medium bowl to create a marinade.
  2. Coat each chicken breast with the marinade and refrigerate for at least one hour.
  3. Preheat your oven to 400°F (200°C).
  4. Prepare a baking sheet by spraying it with non-stick cooking spray or lining it with parchment paper.
  5. Make deep cuts along the sides of each chicken breast to create pockets.
  6. Stuff each pocket with slices of Roma tomatoes, mozzarella, and basil leaves.
  7. Bake for 25–30 minutes or until the internal temperature reaches 165°F (75°C).
  8. Let the chicken rest for five minutes after baking.
  9. Serve with a drizzle of balsamic glaze for added flavor.

Notes

Feel free to add sun-dried tomatoes or olives to the stuffing for extra flavor.
