A delicious Italian-inspired omelet featuring fresh mozzarella, cherry tomatoes, and basil, perfect for a quick breakfast or brunch.

Ingredients

  • 2 eggs
  • 1/4 cup fresh mozzarella, diced
  • 1/2 cup cherry tomatoes, halved
  • Fresh basil leaves
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Whisk the eggs in a bowl and season with salt and pepper.
  2. Heat a splash of olive oil in a medium skillet over medium heat.
  3. Pour the whisked eggs into the pan, letting them spread evenly.
  4. Add the diced mozzarella and halved cherry tomatoes on one half of the omelet.
  5. Cook for another minute until the cheese starts to melt.
  6. Fold the omelet in half using a spatula and cook for an additional minute.
  7. Garnish with fresh basil before serving.

Notes

Pair with toasted sourdough or arugula salad for a complete meal. Best enjoyed fresh, but can be reheated.
