A delightful combination of sweet and savory flavors with crispy bacon wrapped around tender, caramelized sweet potatoes glazed in brown sugar and maple syrup.

Ingredients

  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 8 slices of bacon, cut in half
  • 1/4 cup brown sugar
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • Salt and pepper to taste
  • 8 skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions

  1. Preheat your oven to 400°F (200°C) to get ready for roasting.
  2. Boil the sweet potatoes in a medium pot until just tender, about 8-10 minutes.
  3. Cook the bacon in a large skillet over medium heat until partially cooked, about 3-4 minutes.
  4. Make the glaze by combining brown sugar, maple syrup, cinnamon, nutmeg, salt, and pepper.
  5. Coat the sweet potato cubes in the glaze until fully covered.
  6. Assemble the skewers by wrapping each sweet potato cube with a bacon slice and securing it with a skewer.
  7. Bake the skewers on a baking sheet for 15-20 minutes or until the bacon is crispy.
  8. Cool slightly and serve warm.

Notes

These skewers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
