  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup diced tomatoes
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add shrimp and Cajun seasoning, sautéing until shrimp are pink and cooked through, about 3-5 minutes.
  4. Add garlic to the skillet and cook for an additional minute.
  5. Pour in the heavy cream and diced tomatoes, bringing the mixture to a simmer.
  6. Stir in the Parmesan cheese and season with salt and pepper.
  7. Toss the cooked pasta in the sauce until well coated.
  8. Serve hot, garnished with chopped parsley.

Notes

Make sure your shrimp are fresh or properly thawed to avoid rubbery textures. Don’t overcook the shrimp; they should only take a few minutes to turn pink and opaque.
