  • 1 pound rotini pasta
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons Cajun seasoning
  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Cook the rotini pasta according to the package directions. Drain and set aside.
  2. Heat a large skillet over medium-high heat and add the olive oil.
  3. Add the chicken pieces and sprinkle with Cajun seasoning. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  4. Sauté the minced garlic in the skillet for about 1 minute, until fragrant.
  5. Stir in the diced red and green bell peppers. Cook for an additional 2-3 minutes until the peppers start to soften.
  6. Pour in the heavy cream and chicken broth, stirring to combine.
  7. Bring the mixture to a simmer and let it cook for about 5 minutes, allowing the sauce to thicken slightly.
  8. Add the cooked rotini pasta to the skillet, stirring to coat the pasta with the sauce.
  9. Gradually stir in the shredded cheddar cheese until it is completely melted and the sauce is smooth and creamy.
  10. Season with salt and pepper to taste.
  11. Remove from heat and sprinkle with chopped fresh parsley for garnish before serving.

Notes

For extra crunch, consider adding sliced green onions or jalapeño on top before serving.
