  • 8 ounces of fettuccine or penne pasta
  • 1 pound of boneless, skinless chicken breasts
  • 2 tablespoons of Cajun seasoning
  • 1 tablespoon of olive oil
  • 1 cup of heavy cream
  • 1 cup of chicken broth
  • 1 cup of diced tomatoes
  • 1 cup of bell peppers (red and green), sliced
  • 1/2 cup of onion, diced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta according to package instructions, then drain and set aside.
  2. Season the chicken breasts with Cajun seasoning and let it sit for 10 minutes.
  3. Sauté the seasoned chicken in olive oil over medium heat until browned and cooked through, about 6-7 minutes per side.
  4. Sauté the diced onion and sliced bell peppers in the same skillet for about 3-4 minutes until softened.
  5. Create the sauce by stirring in the diced tomatoes, chicken broth, and heavy cream, bringing it to a gentle simmer.
  6. Combine the cooked pasta and sliced chicken back into the skillet, tossing everything to coat in the sauce.
  7. Serve hot, garnished with fresh parsley.
