Comforting chicken buttered noodles that come together in just 25 minutes, perfect for a quick weeknight dinner.

Ingredients

  • 1 lb boneless (skinless chicken breasts or thighs, cut into bite-size pieces)
  • 1 tablespoon olive oil or butter
  • Salt (to taste)
  • Black pepper (to taste)
  • ½ teaspoon garlic powder (optional)
  • 8 to 12 oz egg noodles
  • 4 tablespoons butter
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ cup grated Parmesan cheese (optional)
  • Chopped parsley (optional garnish)

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the egg noodles according to package instructions until tender, then drain and set aside.
  3. In a large skillet over medium heat, heat the olive oil or butter until hot and shimmering.
  4. Add the bite-sized chicken pieces to the skillet, seasoning them with salt, pepper, and garlic powder if using. Cook the chicken for 6 to 8 minutes, stirring occasionally.
  5. Return the cooked noodles to the pot or skillet and add the 4 tablespoons of butter. Stir until the butter melts and the noodles are evenly coated.
  6. Season the buttered noodles with additional salt and pepper to taste.
  7. Add the cooked chicken to the buttered noodles and gently toss everything together to combine.
  8. Serve hot topped with grated Parmesan cheese and a sprinkle of chopped parsley if desired.

Notes

For extra flavor, add a bay leaf or Italian seasoning to the boiling water. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
