A comforting dish that blends the spicy heat of Buffalo chicken with sweet bell peppers, perfect for game day or a cozy weeknight meal.

  • 4 large bell peppers
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 1/2 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • Salt and pepper to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Preheat the oven to 375°F (190°C), allowing it to warm thoroughly while you prepare the peppers.
  2. Cut the tops off the bell peppers and remove the seeds.
  3. Mix the cooked shredded chicken, buffalo sauce, cream cheese, ranch dressing, and half of the cheddar cheese until well combined.
  4. Season the filling with salt and pepper to taste.
  5. Stuff each prepared pepper generously with the chicken mixture.
  6. Place the stuffed peppers in a baking dish and top them with the remaining cheddar cheese.
  7. Cover the baking dish with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and slightly golden.
  9. Garnish with chopped green onions if desired before serving.

Notes

These peppers can be assembled ahead of time and stored in the refrigerator. They also freeze well for up to 3 months.
