  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup fruity jam (any flavor)
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Whisk together the flour, salt, and baking powder in another bowl.
  5. Add the dry ingredients gradually to the wet ingredients, mixing until a dough forms.
  6. Roll out the dough on a floured surface and cut it into rectangles.
  7. Place half of the rectangles on a baking sheet and add a small spoonful of jam in the center of each.
  8. Top each jam-filled rectangle with another rectangle and seal the edges with a fork.
  9. Bake for 12-15 minutes or until the cookies are lightly golden.
  10. Allow the cookies to cool on the baking sheet.
  11. Mix powdered sugar and milk until smooth for the glaze, then drizzle it over the cooled cookies.
