These Brown Butter Toffee Cookies combine rich, nutty flavors with sweet toffee bits for an irresistible treat.

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup toffee bits (Heath or similar)
  • 1/2 cup chocolate chips (optional)
  • Sea salt for sprinkling

Instructions

  1. Brown the Butter: In a medium saucepan over medium heat, melt the unsalted butter, stirring constantly until golden brown and nutty.
  2. Combine Sugars: In a large mixing bowl, combine the brown sugar and granulated sugar. Pour the warm browned butter over the sugar and mix well.
  3. Add Eggs and Vanilla: Add the eggs, one at a time, mixing after each addition. Stir in the vanilla extract.
  4. Mix Dry Ingredients: In a separate bowl, sift the flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until combined.
  5. Fold in Toffee Bits and Chocolate Chips: Fold in the toffee bits and optional chocolate chips until evenly distributed.
  6. Chill the Dough: Cover the bowl with plastic wrap and refrigerate for 30 minutes to 1 hour.
  7. Preheat and Prepare Baking Sheets: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  8. Scoop the Dough: Scoop out 2 tablespoons of dough for each cookie and place them on the sheets, spacing 2 inches apart.
  9. Sprinkle with Sea Salt: Sprinkle a small pinch of sea salt on top of each cookie dough ball.
  10. Bake the Cookies: Bake for 10 to 12 minutes, until edges are lightly golden. Cookies will continue to cook as they cool.
  11. Cool and Transfer: Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
