A vibrant and crunchy broccoli salad with a creamy dressing, perfect for summer picnics and gatherings.

Ingredients

  • 2 cups broccoli florets
  • 1/2 cup red onion, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sunflower seeds
  • 1/2 cup raisins
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • Salt and pepper to taste

Instructions

  1. Combine the veggies and cheeses in a large bowl, mixing broccoli, chopped red onion, shredded cheddar cheese, sunflower seeds, and raisins.
  2. Whisk together the dressing by mixing mayonnaise, apple cider vinegar, and sugar in a separate small bowl.
  3. Dress the salad by pouring the dressing over the broccoli mixture and tossing to combine.
  4. Season with salt and pepper to taste.
  5. Chill in the refrigerator for at least 30 minutes before serving.

Notes

For a crunchier texture, blanch the broccoli briefly. Can be made vegan by substituting plant-based mayo and omitting cheese.
