  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • ½ teaspoon red pepper flakes (optional)
  • 1 small onion (finely chopped)
  • 1 cup crushed tomatoes or marinara sauce
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • ¼ cup reserved pasta water
  • ½ cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Boil the Pasta: Bring a large pot of salted water to a boil.
  2. Cook the Spaghetti: Cook the spaghetti until al dente according to package instructions.
  3. Reserve Pasta Water: Reserve ¼ cup of pasta water before draining the spaghetti.
  4. Heat the Olive Oil: In a large pan over medium heat, heat the olive oil.
  5. Sauté the Onions: Add the chopped onion and sauté for about 3 minutes until softened.
  6. Add Garlic and Red Pepper Flakes: Stir in the minced garlic and red pepper flakes, cooking for another 30 seconds.
  7. Combine Ingredients: Stir in the crushed tomatoes, salt, black pepper, and Italian seasoning.
  8. Simmer the Sauce: Allow the sauce to simmer for 8 to 10 minutes.
  9. Mix in the Spaghetti: Add the cooked spaghetti and reserved pasta water to the sauce.
  10. Garnish and Serve: Top the pasta with grated Parmesan and fresh herbs, then serve immediately.

Notes

For a protein boost, consider adding cooked chicken, shrimp, or chickpeas. This dish can be stored in an airtight container in the fridge for up to 3 days or frozen for up to 3 months.
