A light and refreshing salad bursting with colorful fruits and crisp greens that celebrate the essence of spring.

Ingredients

  • 4 cups Mixed Salad Greens
  • 1 cup Strawberries (sliced)
  • 1 large Orange (sliced)
  • 1 medium Cucumber (diced)
  • 1/4 medium Red Onion (thinly sliced)
  • 1/2 cup Feta Cheese (optional, crumbled)
  • 1/2 cup Walnuts or Pecans (toasted, optional)
  • 3 tablespoons Olive Oil
  • 2 tablespoons Orange Juice (freshly squeezed)
  • 1 tablespoon Lemon Juice (freshly squeezed)
  • 1 teaspoon Honey or Maple Syrup
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Gather your ingredients.
  2. Rinse the mixed salad greens under cold water, then spin dry or pat dry.
  3. Slice the strawberries and oranges into bite-sized pieces, dice the cucumber, and thinly slice the red onion.
  4. Add the sliced strawberries, orange, diced cucumber, and red onion to the bowl of salad greens.
  5. Whisk together olive oil, orange juice, lemon juice, honey or maple syrup, salt, and pepper to make the dressing.
  6. Pour the vinaigrette over the salad and toss gently.
  7. Sprinkle with crumbled feta and toasted nuts if using.
  8. Serve the salad immediately on a beautiful platter.
