Delightful puff pastry bites filled with creamy Brie cheese and sweet jam, perfect for gatherings.

  • ½ batch rough puff pastry or classic puff pastry (or store-bought)
  • All-purpose flour (for work surface, as needed)
  • 1 cup jam of choice (cranberry, plum, or cherry recommended)
  • 4 ounces Brie cheese, rind removed and cut into small pieces
  • 46 sprigs of fresh rosemary
  • 1 egg, whisked with 1 teaspoon of water or cream

Instructions

  1. Preheat your oven to 400°F (200°C) to ensure it reaches the right temperature for baking the puff pastry bites.
  2. Lightly flour your work surface to prevent sticking. Roll out the rough or classic puff pastry to a â…›-inch thickness if not pre-rolled.
  3. Using a sharp knife or pastry cutter, cut the puff pastry into approximately 2″x2″ inch squares to create individual bite-sized pieces.
  4. On each pastry square, place a small spoonful of jam in the center, followed by a piece of Brie cheese. Add a small leaf or a tiny piece of rosemary from the sprigs for a subtle herbaceous note.
  5. Fold the corners of the pastry squares over the filling, gently pressing the edges to seal without squeezing out the filling. You can also leave some open-faced, depending on preference.
  6. Brush the tops and edges of each pastry bite lightly with the egg wash. This will give the pastries a beautiful golden brown finish as they bake.
  7. Arrange the puff pastry bites on a parchment-lined baking sheet, leaving space between each. Bake in the preheated oven for about 15-20 minutes or until the pastry is golden, puffed, and cooked through.
  8. Remove from the oven and let the bites cool slightly on a wire rack. Serve warm or at room temperature as delightful appetizers at any special occasion or party.

Notes

These bites can be paired with a crisp salad or a charcuterie board. Store leftovers in an airtight container for up to 2 days.
