Delicious and customizable breakfast quesadillas filled with eggs, cheese, and sautéed bell peppers, perfect for busy mornings or special brunches.

Ingredients

  • 2 large flour tortillas
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup bell peppers, diced
  • 1/2 cup cooked bacon or sausage, chopped
  • Salt and pepper to taste
  • Cooking spray or oil

Instructions

  1. Sauté the bell peppers in a skillet with cooking spray or oil until soft.
  2. Beat the eggs in a bowl and season with salt and pepper. Add the chopped bacon or sausage and mix together.
  3. Pour the egg mixture into the skillet with the sautéed bell peppers and cook, stirring gently, until just set.
  4. Place one tortilla in a separate skillet over medium heat and sprinkle half of the cheese on one half of the tortilla.
  5. Spoon the scrambled egg mixture over the cheese, then fold the tortilla over.
  6. Cook the quesadilla until golden brown on both sides and the cheese is melted, about 3-4 minutes per side.
  7. Repeat the process with the second tortilla, using the remaining cheese and egg mixture.
  8. Slice and serve with salsa or sour cream.

Notes

For a fluffier egg mixture, add a splash of milk or cream when beating the eggs. These quesadillas can be customized with different fillings.
