Breakfast Potato Skins

Crispy potato skins filled with bacon, cheddar cheese, and topped with sour cream and green onions.

Ingredients

  • 3 large potatoes
  • 4 slices of bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub the potatoes under running water and pierce them with a fork.
  3. Bake the potatoes on the oven rack for 45-60 minutes until tender.
  4. Cool the potatoes, then cut in half and scoop out some flesh, leaving about 1/4 inch around the skin.
  5. Brush the inside of each half with oil, season, and bake until crispy, about 10-15 minutes.
  6. Fill each skin with crumbled bacon and cheddar cheese, then bake just until cheese melts, about 5 minutes.
  7. Garnish with sour cream and green onions before serving.
