  • 2 Bell peppers, diced
  • 1 Onion, diced
  • 4 Eggs
  • 2 tablespoons Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Dice the potatoes, bell peppers, and onions into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat.
  3. Cook the diced potatoes until golden brown and tender, about 10 minutes.
  4. Add the bell peppers and onions, cooking until softened, about 5 minutes.
  5. Make wells in the mixture for the eggs.
  6. Crack an egg into each well.
  7. Cover the skillet and cook until the whites are set, about 5-7 minutes.
  8. Season with salt and pepper, then serve warm.
