Ingredients

  • 8 flour tortillas
  • 6 eggs
  • 1 cup cooked and crumbled sausage
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup diced bell peppers
  • 1/2 cup diced onions
  • 1 cup salsa
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the diced onions and bell peppers until softened.
  3. Beat the eggs and season with salt and pepper.
  4. Combine the sausage with the onions and peppers, then pour in the beaten eggs and scramble.
  5. Assemble the enchiladas by placing egg mixture in tortillas and rolling them tightly.
  6. Bake rolled tortillas with salsa and cheese in a greased dish for 20-25 minutes.
