Boursin Chicken

A comforting dish of tender chicken enveloped in a creamy Boursin cheese sauce, perfect for weeknight dinners or special occasions.

Ingredients

  • 2 large chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 medium onion (chopped)
  • 3/4 cup chicken broth
  • 5.2 oz package of Boursin Fine Herbs & Garlic cheese (softened)
  • Optional: chopped parsley for garnish

Instructions

  1. Cut chicken breasts in half lengthwise to create four thinner pieces. Season with garlic powder, salt, and pepper.
  2. Heat olive oil and butter in a skillet over medium-high heat. Cook seasoned chicken for about 5-6 minutes on each side until fully cooked. Transfer to a plate.
  3. Add chopped onions to the same skillet and sauté for 5 minutes until softened.
  4. Pour in chicken broth and add softened Boursin cheese; stir until smooth and let bubble for 5 minutes.
  5. Return cooked chicken to the skillet; warm through for a couple of minutes until the sauce thickens.
  6. Adjust seasoning if necessary and serve immediately, with optional chopped parsley for garnish.

Notes

For a lighter version, substitute half of the Boursin cheese with Greek yogurt or cream cheese. Add spinach or sun-dried tomatoes for extra flavor.
