A creamy, herb-infused dip perfect for gatherings, made with Boursin cheese and fresh tomatoes.

Ingredients

  • 8 ounces Boursin cheese (any flavor)
  • 1 cup diced fresh tomatoes
  • 1/4 cup finely chopped red onion
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon balsamic vinegar
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 loaf of French baguette or Italian bread, sliced for toasting
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the diced tomatoes, chopped red onion, chopped basil leaves, balsamic vinegar, minced garlic, salt, and black pepper in a mixing bowl. Stir well.
  3. Arrange the sliced baguette or Italian bread on a baking sheet and drizzle with olive oil.
  4. Toast the bread in the preheated oven for 5-7 minutes, or until golden brown.
  5. Remove the toasted bread from the oven and let it cool slightly.
  6. Spread the Boursin cheese evenly on the bottom of a serving dish.
  7. Spoon the tomato mixture over the Boursin cheese.
  8. Garnish with additional fresh basil leaves or a drizzle of balsamic glaze if desired.
  9. Serve immediately with the toasted bread on the side for dipping.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Re-toast bread for best results.
