Delicious blueberry scones with crisp exteriors and soft interiors, perfect for brunch or tea time.

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and diced
  • 1 cup blueberries (fresh or frozen)
  • 2/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 egg (for egg wash, optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the flour, sugar, baking powder, and salt in a large mixing bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Fold in the blueberries gently.
  5. Mix the milk and vanilla extract together in another bowl, then gradually add to the dry ingredients.
  6. Knead the dough gently on a floured surface and shape into a circle about 1-inch thick.
  7. Cut the dough into wedges and place on a baking sheet lined with parchment paper.
  8. Bake for 15-20 minutes until golden brown.
  9. Cool slightly before serving.

Notes

Use cold butter for the best texture and don’t overmix the dough.
