  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.
  2. Mix together the flour, sugar, salt, baking powder, and baking soda in a bowl.
  3. Combine the melted butter, egg, vanilla extract, and milk in another bowl.
  4. Pour the wet ingredients into the dry ingredients, mixing gently until just combined.
  5. Fold in the blueberries gently to distribute them through the batter.
  6. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
  7. Bake for 18-20 minutes or until golden brown and a toothpick comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring to a wire rack.

Notes

Don’t overmix the batter to ensure fluffy muffins. Store leftovers in an airtight container at room temperature for up to three days.
