Delightful blueberry muffins that are soft, fruity, and perfect for any time of the day.

Ingredients

  • 1 cup fresh blueberries
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In another bowl, mix the milk, vegetable oil, egg, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick comes out clean.
  8. Let cool for a few minutes before serving.

Notes

Wash the blueberries gently and dry them well to avoid excess moisture. Do not overmix the batter. Sprinkle sugar on top for a sweet crust.
