A rustic dessert that captures the essence of summer, filled with fresh blueberries and a flaky, golden crust.

  • 1 1/2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 pre-made pie crust
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C) so it’s ready for that golden crust.
  2. In a bowl, combine the fresh blueberries, granulated sugar, cornstarch, vanilla extract, and salt. Mix gently until the blueberries are well coated and sit aside, allowing their sweetness to mingle and deepen.
  3. On a lightly floured surface, roll out the pre-made pie crust into a circle large enough to hold your beautiful filling. Transfer it carefully to a baking sheet lined with parchment paper.
  4. Spoon the blueberry mixture onto the center of the crust, leaving a generous 2-inch border all around. This will help create the rustic folded edges.
  5. Gently fold the edges of the crust over the blueberry filling, pleating it as you go for a beautiful, artisan look.
  6. Beat the egg and brush it over the crust to give it that irresistible golden color. For the finishing touch, sprinkle coarse sugar on top to create a delightful crunch.
  7. Place your masterpiece in the preheated oven and bake for 25-30 minutes, or until the crust is a gorgeous golden brown and the blueberries are bubbling with joy.
  8. Allow the galette to cool slightly before serving. This gives the juices a chance to settle and makes slicing a breeze.
