Delightful Blueberry Crumb Bars that combine a buttery crumb topping with a fresh blueberry filling, perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 2 cups fresh blueberries
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×9 inch baking pan.
  2. Combine in a medium bowl, 1 1/2 cups of all-purpose flour, 1/2 cup of sugar, and 1/4 teaspoon of salt.
  3. Cut in 1/2 cup of cold butter until the mixture resembles coarse crumbs.
  4. Pat half of the crumb mixture into the bottom of the prepared pan.
  5. Toss 2 cups of fresh blueberries with 1 tablespoon of lemon juice, 1 tablespoon of cornstarch, 1 teaspoon of vanilla extract, and 1/2 teaspoon of cinnamon.
  6. Spread the blueberry mixture evenly over the crumb layer.
  7. Sprinkle the remaining crumb mixture on top of the blueberries.
  8. Bake for 45-50 minutes, or until the top is golden brown.
  9. Cool before cutting into squares and serving.

Notes

Serve with whipped cream or vanilla ice cream for an extra treat. Can be stored in an airtight container at room temperature for up to 3 days.
