A delightful loaf featuring a luscious combination of blueberries and cream cheese, perfect for any time of the day.

Ingredients

  • 2 cups all-purpose flour, sifted
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup milk (or almond milk)
  • 1 cup fresh blueberries (or thawed frozen blueberries)
  • 8 oz cream cheese, softened, mixed with ¼ cup sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. Whisk together the sifted flour, granulated sugar, baking powder, and salt.
  3. Mix the softened butter and sugar until light and fluffy, then add the eggs one at a time.
  4. Stir in the vanilla extract and milk.
  5. Add the flour mixture to the wet ingredients, mixing until just combined.
  6. Fold in the fresh blueberries gently.
  7. Prepare the cream cheese mixture by mixing with ¼ cup sugar.
  8. Assemble the loaf by pouring half of the batter into the pan, adding cream cheese, and repeating.
  9. Bake for 50-60 minutes or until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.
  11. Slice and serve warm or at room temperature.

Notes

Serve with whipped cream or a sprinkle of powdered sugar. Can be stored for up to three days at room temperature.
