A nourishing and filling breakfast bake made with cottage cheese, blueberries, and warming spices, perfect for starting your day.

Ingredients

  • 2 cups cottage cheese
  • 1 cup fresh or frozen blueberries
  • 1/2 cup rolled oats
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cottage cheese, rolled oats, honey or maple syrup, eggs, vanilla extract, baking powder, cinnamon, and salt in a large mixing bowl.
  3. Fold in the blueberries gently with a spatula.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Bake for 25-30 minutes or until the center is set and the top is golden brown.
  6. Cool slightly before serving.

Notes

Serve with honey or maple syrup and a side of fresh fruit or yogurt. Store leftovers in the fridge for up to 3 days.
