A delightful blend of creamy cottage cheese and juicy blueberries, this bake is perfect for breakfast, brunch, or as a sweet snack.

  • 2 cups cottage cheese
  • 2 large eggs
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen blueberries
  • 1 teaspoon cinnamon (optional)
  • 1 tablespoon butter or non-stick spray (for greasing the baking dish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or non-stick spray.
  2. Mix the cottage cheese, eggs, honey (or maple syrup), and vanilla extract in a large mixing bowl. Whisk until smooth.
  3. Prepare the rolled oats, baking powder, salt, and cinnamon (if using) in another bowl.
  4. Combine the dry ingredients with the wet mixture, stirring until fully combined.
  5. Fold in the blueberries gently to avoid mashing them.
  6. Pour the mixture into the prepared baking dish, spreading it evenly.
  7. Bake for 30-35 minutes, or until golden brown and a toothpick comes out clean.
  8. Cool for a few minutes before slicing into squares. Serve warm or at room temperature.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in the microwave or toast for a crispy edge.
