  • 2 tablespoons blackening seasoning
  • 8 oz pasta (e.g., penne or fettuccine)
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the Chicken: Generously season your chicken breasts with the blackening seasoning.
  2. Blacken the Chicken: In a hot skillet, heat olive oil over medium-high heat. Add the seasoned chicken breasts and cook for 5-7 minutes on each side until blackened and cooked through.
  3. Cook the Pasta: In a pot of boiling water, add your pasta, cooking according to package instructions. Drain and set aside.
  4. Sauté Garlic and Tomatoes: In the same skillet, add minced garlic and halved cherry tomatoes. Sauté for 2-3 minutes until softened.
  5. Create the Creamy Sauce: Pour in heavy cream and add grated Parmesan cheese. Stir until well combined and heated through.
  6. Combine with Pasta and Chicken: Add cooked pasta and sliced chicken to the skillet, tossing gently to coat with the sauce. Season with salt and pepper to taste.
  7. Garnish and Serve: Garnish with fresh parsley and serve immediately.

Notes

For extra flavor, consider adding a dash of hot sauce to the creamy sauce. Leftovers can be stored in an airtight container for up to 3 days.
