A nostalgic dessert featuring juicy blackberries baked in a buttery, fluffy batter.

Ingredients

  • 2 cups fresh blackberries
  • 1 cup sugar (divided)
  • 1/2 cup all-purpose flour
  • 1 cup milk
  • 1/4 cup butter, melted
  • 1 tbsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the fresh blackberries with 1/2 cup of sugar in a mixing bowl.
  3. Whisk together the flour, the remaining 1/2 cup of sugar, baking powder, and salt in another bowl.
  4. Stir in the milk and melted butter to the dry ingredients until just combined.
  5. Pour the batter into a greased baking dish, spreading it evenly.
  6. Spoon the blackberries along with their juices over the top of the batter.
  7. Bake for 45-50 minutes or until golden brown and fragrant.
  8. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F for 10-15 minutes.
