Delicious Birria Tacos made with tender, marinated beef enveloped in warm corn tortillas, topped with fresh toppings, and served with a flavorful dipping broth.

Ingredients

  • 2 lbs beef chuck roast
  • 2 lbs beef short ribs
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3 dried guajillo peppers
  • 2 dried ancho peppers
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt and pepper to taste
  • Corn tortillas
  • Chopped cilantro for garnish
  • Diced onions for garnish
  • Lime wedges

Instructions

  1. Simmer the beef chuck roast and short ribs with onions, garlic, and enough water to cover for about 2 hours until tender.
  2. Toast the dried guajillo and ancho peppers in a skillet until fragrant, then soak them in hot water for 10 minutes.
  3. Blend the soaked peppers with cumin, oregano, salt, and some of the cooking liquid to form a sauce.
  4. Shred the cooked beef and mix it with the prepared sauce.
  5. Warm corn tortillas on a griddle and fill them with the beef mixture, folding them in half to create the tacos.
  6. Serve hot with chopped cilantro, diced onions, and lime wedges on the side.

Notes

Pair with Mexican rice or refried beans. Serve with consomé for dipping.
