Deliciously soft and fluffy vanilla muffins bursting with colorful sprinkles, perfect for any occasion.

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon pure vanilla extract
  • ½ cup rainbow sprinkles
  • To taste powdered sugar (for dusting)
  • To taste cream cheese frosting (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or spray it with non-stick cooking spray.
  2. In a medium bowl, combine the all-purpose flour, baking powder, and salt. Whisk them together to blend evenly.
  3. Beat the softened butter and granulated sugar together until light and fluffy.
  4. Add the two large eggs, one at a time, mixing well after each addition.
  5. Pour the milk and vanilla extract into the butter-egg mixture. Stir gently until combined.
  6. Fold in the dry ingredients into the wet ingredients, being careful not to overmix.
  7. Gently fold in the rainbow sprinkles.
  8. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  9. Place the muffin tin in the preheated oven and bake for 18-20 minutes.
  10. Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring to a wire rack.
  11. Dust the muffins lightly with powdered sugar and top with cream cheese frosting if desired.

Notes

Store muffins in an airtight container at room temperature for up to 3 days or in the refrigerator for a week. Freezing is also an option for longer storage.
