3 lbs goat meat
4–5 tbsp curry powder
½ cup green seasoning
2 tbsp adobo
3 tbsp complete seasoning
3 tbsp black pepper
6 pimento seeds (allspice)
2 medium potatoes (cubed)
Optional: ½ Scotch bonnet pepper, ¼ cup onion, ¼ cup sweet pepper
Instructions
Wash goat meat in vinegar, lime, and water; rinse well to ensure your meat is clean and ready to soak in all those delicious flavors.
Combine dry seasonings and rub into the meat thoroughly to ensure every piece is coated with flavor. Marinate overnight in the refrigerator to let those spices work their magic.
Allow meat to sit at room temperature for 10–15 minutes before cooking to help tenderize it.
Add crushed garlic and a splash of water in a pot; heat until bubbling, allowing the garlic to release its fragrant aroma.
Add curry powder and pimento seeds to the pot, stirring them in, then mix in the marinated goat meat and brown evenly.
Pour in water mixed with chopped vegetables (onion and sweet pepper, if using) and simmer on low heat for 120–180 minutes.
Add cubed potatoes during the last stages of cooking, allowing them to soak up the spices.
Serve hot with rice and peas or your favorite side dishes.
Notes
For optimal flavor, marinate goat meat for 12-24 hours. Leftovers can be stored in an airtight container for up to 3 days.
