A hearty and satisfying slow-cooked chilli con carne with rich flavors and vibrant spices, perfect for cold evenings.

Ingredients

  • 500 g 5% fat minced beef (ground beef)
  • 1 medium red onion (diced)
  • 4 cloves garlic (minced)
  • 3 stalks celery (diced)
  • 400 g tin chopped tomatoes
  • 2 tablespoons tomato purée
  • 400 g tin mixed beans in chilli sauce
  • 200 ml beef stock
  • 1 tablespoon dried thyme
  • 1 ½ teaspoons chilli powder
  • 2 teaspoons cumin
  • 1 tablespoon cocoa powder or 1 small square of dark chocolate
  • 1 tablespoon smoked paprika

Instructions

  1. Heat a skillet over medium heat with vegetable oil. Brown the ground beef along with diced onions and minced garlic for about 10 minutes until golden.
  2. Transfer the browned mixture to your slow cooker.
  3. Add chopped tomatoes, mixed beans, beef stock, celery, and spices including chilli powder and smoked paprika to the slow cooker.
  4. Cover and cook on low for 480 minutes or high for 300 minutes. Adjust seasoning as needed before serving.
  5. Serve hot with optional toppings like avocado slices or crispy tortilla chips.

Notes

Feel free to swap the beans or add more veggies like bell peppers or zucchini. Adjust the quantity of chilli powder to suit your preferred heat level.
